Tsatziki


A versatile little dip that both refreshes and enhances a vast array of dishes.

Anyone who has travelled to Greece or Turkey will have tried this dip - it is often served along with bread and olives, as an extra with your main order or as part of the mezze. In whichever form it arrives I will absolutely devour it. Which makes it all the more surprising that is so easy to make, and with ingredients around the home. I tentatively tried making this and falafel with my school cooking club and i was pleasantly surprised to find that it was very popular among the children. Try it yourself, you may be surprised.

 

Serves: 2

Prep Time: 5 mins

Infusion Time: 2 hours

 

Ingredients:

  • Greek Yogurt - 2tbsp

  • Cucumber - 3 inches

  • Garlic - 1 clove

  • Salt/pepper

  • Olive oil

  • Paprika/mint - optional

 

Method:

1). Peel and de-seed the cucumber. Chop finely and add to the yogurt.

2). Finely chop the garlic and add this to the mix with a pinch of salt and pepper.

3). Sprinkle with paprika and mint if desired and let the flavours infuse by leaving in the fridge for a couple hours.

4). Check seasoning and serve.
