This is one of those beautifully simple sauces that is popular with almost everyone.
The main danger here is that once you make your own you will not want to go back to shop bought jars... that said, it is very quick and easy.
Tips:
A lighter toasting should give a creamier result.
A toastier toasting (if such a descriptive exists) will give you a more nutty result.
Feel free to fiddle with the balance of ingredients to suit your own tastes. Different parmesan or olive oil (for example) will be different in strength.
Prep time: 5 minutes
Cooking Time: 4 minutes
Serves: 4 portions
Ingredients:
50g pine nuts
80g basil
25g parmesan
2 garlic cloves
120ml olive oil
Method:
Heat a small frying pan over a low heat - do not add oil.
Dry fry the pine nuts until golden, shaking occasionally.
Put the basil, parmesan, olive oil and garlic cloves into a food processor with the toasty pine nuts.
Process until smooth and season with salt as necessary.
