PRASORIZO - GREEK RICE WITH LEEKS & TOMATO


Ahhh Greece! A Beautiful country with charming people and a chilled atmosphere for a summer escape. Greek cuisine is also a favourite of mine. Greece has a great selection of simple and delicious vegetable dishes and whilst this is more of a carby side dish, it is a veg filled one. This dish is a beautifully versatile side dish: I have it with baked salmon, chicken supreme, or almost any cuts of meat really. Whilst I'm making a little guess as to how it's made and Greeks may argue with my take on it, my take is quick, simple and satisfying so give it a go! The dill is optional but I think it does add a beautiful fragrance.

 

Notes on the Cooking Rice: You could cook whichever kind of rice you like with this. For this recipe the cooking time and water is based on cooking white rice such as basmati or jasmine rice. I like to use brown rice as it fills me up for longer; if you want to start trying more brown rice then this is a good recipe for it as there are other strong flavours so you won’t notice the small taste differences between white/brown rice.

If you do cook brown rice it will need 30 minutes and you need 2.5 cups of water for each cup of rice. White rice needs 20 minutes and 2 cups for 1 cup of rice. Cooking with right amount of water should mean there is no need to drain the rice and you can keep all your flavour in the rice.

 

Prep time: 5 minutes Cooking time: 20 minutes

Serves: 2

 

Ingredients:

  • 1/2 cup of Rice

  • 1 cup of water or stock (boiled)

  • 1 Tablespoon of Tomato Paste

  • 2 Leeks (1 per person)

  • 2 cloves of Garlic

  • Handful of Pine Nuts

  • Dill - as little or as much as you like!

 

Method: 1). Trim the leeks, cut into slices, and lightly brown in the olive oil on a medium high heat.

2). Add the tomato paste, crushed garlic, the salt and pepper and some of the water to cook the leeks. 3). After 5 minutes, add the rest of the hot water and add the rice once it comes to a boil. Add half of the dill, cover the pot and simmer for 15-20 minutes. 4). Taste: check the seasoning and that the rice is cooked. Add the rest of the dill and serve.
