A classic British favourite - fish fingers. A lovely recipe to cook with children and show them what a family favourite actually consists of. Oddly enough, it's mostly fish.
Definitely try making your own breadcrumbs. If you've got a food processor then it really is very simple to throw a few pieces of bread in - and it really doesn't matter if they're stale or fresh. Lastly, you can fry or bake these but as I made these with children, I decided to bake them.
Ingredients:
Cod 500g
Flour 100g
Eggs - 2
Salt/Pepper
Breadcrumbs – 100g
Parmesan - 30g
Thyme - handful
Preparation:
Prepare a bowl with seasoned flour (salt, pepper and a herb of your choice).
Crack the eggs and whisk these together.
In another bowl, pour in your breadcrumbs and add parmesan.
Method:
Dab your fish dry with kitchen roll.
Slice into 3 or 4 finger shaped pieces.
Sprinkle with salt.
Place these into the seasoned flour and coat the fish.
Now carefully cover the fish pieces in egg - drip off the excess, you just want a coating.
Roll the fish in the breadcrumbs.
Place on a baking tray and cook at 220 degrees C for 15-20 minutes.
