Jam Tarts


Oh jam tarts. Such simplicity, such beauty.

A few basic ingredients from the cupboard and you have yourself a quick and moreish treat.

You probably made these with parents or grandparents as a kid. Don't let that lessen your opinion of these treats. Give them a try once more and you'll be awash with nostalgia.

Tip: Try using ground almond to replace some of the flour - it'll add a different flavour and texture to your tarts.

 

Ingredients:

  • Softened butter 130g

  • Plain flour 250g

  • Egg - 1

  • Vanilla essence - 1tsp

  • Jam - your choice of flavours

  • Icing Sugar to decorate

Method:

  1. Put the flour, butter and a pinch of salt in a bowl and rub them together with your fingertips.

  2. When the mixture looks and feels like fresh breadcrumbs, stir in the egg and vanilla.

  3. Add 1 tbsp of cold water - bring the dough together in one lump with your hands – try not to over knead.

  4. Wrap in cling film and chill in the fridge for 30 mins preferably.

  5. Dust your work surface with flour.

  6. Unwrap and roll out the pastry until it’s around the thickness of a £1 coin, then cut out 6 circles, big enough to line the holes in the tin.

  7. Dollop 1-2 tsp of filling into each one.

  8. Using any spare dough, create some shapes to top off the tarts.
