These skewers are fun and easy to make. Whether it's a summer barbecue or a winter house warming, these will be a popular addition to your dinner plate.
You can make these with all sorts of various marinades: jerk, peri peri, teriyaki, or whatever else you fancy.
My marinade here is a tad ad-hoc - an easy throw together. But a good marinade makes all the difference.
Prep Time: 15 minutes
Cooking time: 10 minutes
Makes: 4 skewers
Ingredients:
Chicken breasts - x2
Peppers - 1 red, 1 green
Red onion - x1
Courgette - x1
Honey
Sesame seeds
Sesame oil
Olive oil
Garlic clove - 1 minced
Red Chilli
Method:
1). Chop your chicken into 3-4cm chunks and place into a sandwich bag.
2). Add the marinade ingredients to your chicken: Olive oil, sesame seeds/oil, garlic, honey, salt, pepper and chilli and allow to marinade for 30-60 minutes.
3). Chop your vegetables into a similar sized chunks as the chicken. Skewer the chicken and vegetables onto your skewers.
4). Griddle chicken on a medium high heat for 8-10 minutes. If over a barbecue this will suffice. If however, you are trying to brighten up a dull January evening, then finish in a high oven for 5 minutes
5). Serve with a pineapple salsa.
